KAYA (Malaysian Coconut Jam)

What to do when you have leftover coconut milk and pandan leaves? Make Kaya of course! Kaya is a creamy, delicious egg-based spread (some call it a jam) which you can put on toast for a hearty breakfast or afternoon snack. Its special dense texture comes from simmering thick coconut milk and egg yolk together, while the pandan leaves and muscovado sugar give it a sweet and sticky flavour.  Continue reading

AVOCADO PESTO

As you will see, the next few Homecrest posts will all be about what to do when you make something and have leftovers of certain ingredients. I absolutely hate waste, and I would much rather create something new and interesting than throw away perfectly edible food! So this morning, when I made baked eggs inside avocado cups (it looked absolutely ridiculous so no photos for now!), I had a lot of leftover avocado flesh from scooping out the inside to make space for the egg. Pair that with having leftover gluten-free spaghetti, and you get avocado pesto! Yum.  Continue reading

MALLOREDDUS ALLA CAMPIDANESE (Sardinian Spicy Sausage Pasta)

A wonderful friend of mine recently went on holiday to Sardinia and, knowing that I like to cook, brought me back an edible gift. She asked me to think up a recipe for it and write a post about it on Homecrest.
